If you’re used to celebrating Independence Day, the 4th of July, with a barbecue. Here’s a delicious recipe you could try for all the non meat eaters. To tell you the truth this recipe is a family favourite even though we’re not vegetarian, and with all the different coloured vegetables it’s a riot of colour as well as being healthier than a normal burger. Enjoy!

Sweet Potato and Halloumi Vegetarian Burger

Serves 4

Ingredients

250g of halloumi, cut in to 8 slices
1 large unpeeled sweet potato,sliced thinly
1 red chilli, de-seeded and chopped
Zest and juice of 1 lemon,
Olive oil
Handful coriander
1 large ripe avocado, mashed
2 tablespoon of mayonnaise
4 brioche buns, halved and toasted
2 roasted red peppers from a jar, drained, sliced
Handful of rocket

Method

Put the halloumi and sweet potato in a bowl with the chilli, lemon zest, most of the juice, and a tablespoon of oil. Let it marinate for 30 minutes.

Mix the mashed avocado with the mayonnaise, a splash of lemon, chopped coriander and a pinch of salt and pepper.

Heat up a griddle pan and cook the sweet potato for a few minutes on each side until softened. Take them out, then cook the halloumi cheese for about 1 minute on each side or until just charred.

To build your burger firstly spread the mashed avocado mixture onto the toasted bun, then top with the sweet potato and roasted peppers, followed by the halloumi, finish off with the rocket and add the bun tops.
